CARIBBEAN DINNER NIGHT

Our monthly dinner had a Caribbean theme this time. Many of the residents got into the swing and wore brightly coloured outfits. The High School catering students, who usually serve us were not able to come this month because it is the end of the school year in OZ and the students have their exams. So the dinner committee organised a captain for each table who helped the staff to serve. The CEO also helped cook while the chef was our guest speaker instead.

The menu: 

Salmon with Coconut & Lemon Myrtle with Cajun Spiced Cauliflower Wings and Chickpea, Orange ,Tomato &Fennel Warm Salad 

OR 

Jerk Chicken with Couscous and Gremolata, Grilled Lime with Avocado, Mango, Pineapple and Mint Salsa and Cajun Spiced Cauliflower Wings 

Dessert : Pineapple and Lime Cake with Pina Colada Ice-Cream, Coconut Foam and Fruit Coulis

    Such a nice tradition. Since we have moved from a retirement community in MD to apartment and soon to be a new to us house in NH we no longer have events like that to participate in. We decided being closer to family was more important for us at this stage. Your community does a nice job of getting folks together. Covid taking a toll back in MD so events like that have been on hold since March.

    LOVE our hat! and both of you look great. so happy you are virus free and can have your parties without fear. here in USA we live in constant fear, virus and the mad man in the white house combined. everyone there looks super happy

    How nice to have some normality. Such community events are still not allowed here and it looks like they won't be for a while yet. Your menu has made me feel hungry!

    Another fun event for all, Diane, and it was so nice to see all those smiling and unmasked faces. I know that you said the covid numbers have been either low or non-existent in your area and that is wonderful. Here, the library has closed again, but is doing curbside deliveries, and the local banks are not providing lobby services as of next week. I expect the list will get longer as time goes on and the holidays draw closer, so keep these cheerful moments coming, please. You and Bill looked very festive as did everyone else.

    I have been to Puerto Rico which I think is part of the Caribbean. There was Spanish influence there which I guess is reflected in the food you had at your party.
